Rosemary Chicken with Potatoes

This evening, I prepared Rosemary Chicken with Potatoes based off of the recipe on McCormick's card on those little packages that include all of the seasonings. Due to me being a novice, I figured, how could I screw this up when they give me everything I need?!

So this is what the end result should look like. The link under the picture will bring you directly to the recipe; however, the below are the instructions that were on the card with the seasonings that are slightly different.

 
Rosemary Chicken w/Potatoes from McCormick's website

Makes 6 servings.
Prep Time: 15 minutes
Cook Time: 40 minutes

INGREDIENTS
2 tablespoons olive oil
1 tablespoon McCormick® Paprika
1 1/2 teaspoons McCormick® Rosemary Leaves, finely crushed
1 teaspoon Sea Salt from McCormick® Sea Salt Grinder
1/2 teaspoon McCormick® Black Pepper, Coarse Ground
1/2 teaspoon McCormick® Garlic Powder
6 bone-in chicken thighs, skin removed (about 2 pounds)
1 1/2 pounds small red potatoes, halved


 

DIRECTIONS
1. Mix oil, all of the spices and salt in large bowl. Add chicken and potatoes; toss to coat well. Arrange chicken and potatoes in single layer on foil-lined 15x10x1-inch baking pan sprayed with no-stick cooking spray.
 
2. Roast, uncovered, in preheated 425 degree F oven 30 minutes or until chicken is cooked through and potatoes are tender, turning potatoes occassionaly.

I'm feeling good while I'm putting this in the oven. I'm following the directions, it's smelling good, then all of a sudden "BEEP- BEEP-BEEP!" My kids start freaking out and running and yelling "Mommy! Mommy! What's that?! It's too loud! Mommy! Mommy!" Me: "Don't worry girls, it's just mommy doing what she does... burn things..."

 After 30-40 minutes, I decided ok... It's looking good. Let's take it out...


Daa- daa-dunnnn!!!! My version fresh out the oven.





And then me and the girl's plate we shared that included some spinach.










END REVIEW: Easy, low maintenance and pretty good. However, I think it needed more than 1 tablespoon of salt. I had to add more after taking it out to taste the way I like it.  Kids ate it, so that's what's important.

Now the true test... Will the husband approve????

Introduction

Greetings. Friends and Family know I'm not the BEST cook around. In fact, whenever there are get togethers, it's pretty often when no one would request for me to bring anything. At the most, if any, I would bring my mother's meatballs which I have learned to do - which is by far the easiest, but whatever...

Today, I stand as an almost 30 year old wife and mother of 3. I started taking a stab at this thing called cooking and I've had a few successful sessions, and some not so much. A friend of mine was at the house when we were discussing making pumpkin muffins from scratch. Her response, "Let's see if THAT happens." Therefore, I've decided to start this blog to document my trials in becoming a good decent cook for my family. I mean, my kids gotta eat, right? They can't live off of hotdogs!!

So, please, join me as I try some cooking, baking, grilling, and perhaps some cocktail mixing!
